Custom Design Campervans

This is our ultimate guide to campervan cooking! We all know that regardless of the setting,
whether that be coastal or amongst the city, a good meal can make any journey memorable.
In this blog post, we’ll explore a variety of simple and delicious recipes designed specifically
for our campervan kitchens!

Breakfast on the go:

Overnight oats: Combine rolled oats, milk (or a milk alternative), Greek yogurt, and
your favourite toppings e.g. berries, nuts, and honey in a mason jar. Let it sit
overnight in the fridge, and enjoy a nutritious and satisfying breakfast in the
morning.

Breakfast burrito wraps: Fill tortillas with scrambled eggs, cooked sausage or bacon,
diced bell peppers, shredded cheese, and salsa. Roll them up and wrap them in foil
for an easy and portable meal.

Quick and Easy Lunches:

Jar Salads: Layer jars with your favourite salad ingredients e.g. mixed greens,
tomatoes, cucumber slices, carrots, chickpeas, and grilled chicken. Top with
homemade dressing and seal with a lid for a healthy lunch.

Caprese Sandwiches with Pesto Mayo: Spread pesto mayo on slices of crusty bread
and layer with sliced tomatoes, fresh mozzarella cheese, and basil leaves. Grill or
toast the sandwiches until golden brown and crispy for a delicious lunchtime treat.

One-Pot Wonders for Dinner:

Chicken Alfredo Pasta: Cook fettuccine pasta. Next, sauté diced chicken breast with
garlic until cooked through. Add cooked pasta, Alfredo sauce, and cream. Stir until
heated through and garnish with chopped parsley and grated Parmesan cheese.

Stir-Fry with Ginger Soy Sauce: In a large wok, stir-fry sliced bell peppers, broccoli
florets, snap peas, and sliced carrots until tender-crisp. Add cooked rice or noodles,
and toss with a homemade sauce made from soy sauce, minced ginger, garlic, and a
drizzle of sesame oil.

Campfire Classics and Outdoor Grilling:

Classic Cheeseburgers with Burger Sauce: Grill burgers on a portable grill. Serve on
toasted buns with melted cheese, lettuce, tomato, onion, and homemade burger
sauce made from mayo, ketchup, mustard, and pickle relish.

Grilled Veggie and Halloumi Skewers: Add chunks of bell peppers, zucchini, cherry
tomatoes, and halloumi cheese onto skewers. Grill over medium heat until
vegetables are tender and cheese is slightly charred. Serve with a drizzle of balsamic
glaze.

Sweets and Treats by the Fire:

Campfire Banana Boats with Chocolate and Marshmallows: Make a slit in a banana,
and stuff it with chocolate chips and mini marshmallows. Wrap in foil and place on
hot coals or a grill for 5-10 minutes, until chocolate is melted and marshmallows are
gooey.

Grilled Peaches with Honey and Cinnamon: Halve peaches and remove the middle.
Add melted butter and sprinkle with cinnamon and honey. Grill on the cut side down
for 3-4 minutes, until caramelised and tender. Serve with a scoop of vanilla ice
cream.

Snacks for the Road:

Trail Mix: Mix together nuts, seeds, dried fruit, and chocolate chips for a tasty and
filling snack for your adventures.

Homemade Hummus with Vegetables: Blend chickpeas, tahini, lemon juice, garlic,
olive oil, and salt until smooth. Serve with sliced bell peppers, carrots, cucumber,
and celery for a nutritious snack option.
